Ingredients
1 1/2 lb ground beef
1 1/2 cup precooked brown or white rice (chilled)
1 cup frozen corn
15 oz can Rotel, drained
1/2 cup canned black beans, drained and rinsed
1/2 cup green onion, chopped
2 tbsp green onion, reserved for topping
1/2 cup sharp cheddar cheese, shredded
To taste: homemade low sodium taco seasoning
2 tbsp Mrs. Dash seasoning
1 1/4 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
Instructions
Heat a large skillet over medium-high heat.
Add the ground beef and cook until fully browned, breaking it apart with a wooden spoon.
Drain any excess fat from the skillet.
Add the taco seasoning, Mrs. Dash, chili powder, onion powder, and garlic powder to the beef, stirring to coat evenly.
Stir in the drained Rotel, black beans, and frozen corn, cooking for 3-5 minutes until heated through.
Add the chilled precooked rice to the skillet, stirring well to combine and heat through.
Fold in the chopped green onions.
Top with shredded cheddar cheese and cover briefly to melt.
Garnish with reserved green onions before serving.
Notes
Use day-old refrigerated rice for the best texture as it absorbs moisture better. Ensure the Rotel is well drained to keep the dish from becoming too liquidy.
