Ingredients
64 ounces unfiltered apple juice or cider
4 cardamom seeds, crushed
2 (3-inch) cinnamon sticks
2 whole star anise
2-inch piece fresh ginger, sliced into 1/4 inch rounds
1 teaspoon whole cloves
1 whole nutmeg seed
1/2 teaspoon allspice berries
1 whole vanilla bean, split
Instructions
Place cardamom, cinnamon sticks, star anise, ginger, cloves, nutmeg, and allspice into a large cheesecloth or tea strainer to create a sachet.
Secure the spice bundle to the side of the slow cooker handle with butcher’s twine so it is submerged.
Pour the apple juice or cider into the slow cooker.
Add the split vanilla bean directly into the liquid.
Cook on high for 2 hours or on low for 4 hours.
Remove the spice bundle and vanilla bean before serving.
Notes
Use unfiltered apple juice for a heartier, thicker body. Ensure you crush the cardamom seeds beforehand to release their essential oils. The vanilla bean can be reused to make vanilla sugar after washing and drying it.
