  • Total Time: 35
  • Yield: 6-8 servings

Ingredients

Scale

1 lb ground beef (85/15 lean)
4 cloves garlic, minced
1 oz taco seasoning packet
1/2 cup water
16 oz can refried beans
14 oz thick-cut restaurant-style tortilla chips
3 3/4 cups shredded Mexican blend or Monterey Jack cheese
1/2 cup bell peppers, chopped
1 jalapeno, sliced (seeds removed)
1/4 cup red onion, diced
1/3 cup black olives, sliced
2 Roma tomatoes, diced
1 bunch green onions, sliced
3 tbsp fresh cilantro, chopped

Instructions

Preheat your oven to 400°F.
Heat a large skillet over medium-high heat and brown the ground beef until cooked through; drain excess grease.
Add the minced garlic, taco seasoning, and water to the beef.
Stir in the refried beans until the mixture is cohesive and heated through.
Arrange half of the tortilla chips on a large sheet pan.
Top with half of the beef-bean mixture and half of the cheese.
Repeat with a second layer using the remaining chips, beef mixture, bell peppers, and cheese.
Bake for 10-12 minutes until the cheese is melted and bubbly.
Remove from the oven and top with fresh diced tomatoes, red onion, jalapenos, black olives, green onions, and cilantro.

Notes

Ensure you drain the beef fat thoroughly to prevent the chips from becoming soggy. Using thick-cut restaurant-style chips is essential for structural integrity. Store leftovers in an airtight container for up to 2 days, though they are best consumed fresh.
