  • Total Time: 40
  • Yield: 4 servings

Ingredients

Scale

5.3 oz Boursin Garlic & Herbs Cheese
2 pints Cherry tomatoes
1/4 cup Red onion, thinly sliced
3 cloves Garlic, minced
3 tbsp Extra virgin olive oil
1/2 tsp Dried oregano
1/2 tsp Kosher salt
1/4 tsp Black pepper
8 oz Bow tie pasta
1/4 cup Fresh basil, sliced

Instructions

Preheat your oven to 400°F (200°C).
Place the Boursin cheese in the center of a 9×13-inch baking dish.
Arrange the cherry tomatoes, red onion slices, and minced garlic around the cheese.
Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper.
Bake for 30 minutes, or until the tomatoes have burst and the cheese is softened and slightly browned.
While the vegetables roast, cook the pasta in a pot of salted boiling water according to package directions.
Drain the pasta and add it to the baking dish.
Use a spoon to stir the roasted vegetables and softened Boursin to create a creamy coating over the pasta.
Garnish with fresh sliced basil before serving.

Notes

Ensure you do not use low-fat cheese as the fat content is essential for the sauce texture. You can substitute grape tomatoes or rotini pasta based on preference. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
