0.5 cup Italian seasoned breadcrumbs
0.25 cup whole wheat Panko breadcrumbs
0.25 cup Parmesan cheese, freshly grated
0.25 tsp garlic powder
0.25 tsp ground black pepper
2 large egg whites
4 oz part-skim mozzarella, sliced or grated
0.5 cup high-quality tomato sauce

Instructions

Preheat your oven to 400°F and coat a baking sheet with cooking spray.
Cut each chicken breast in half lengthwise to create 4 portions and pound to 1/2-inch thickness.
Combine breadcrumbs, Panko, Parmesan, garlic powder, and pepper in a shallow bowl.
Whisk the egg whites in a separate shallow bowl.
Dip each chicken piece into the egg whites, then coat thoroughly in the breadcrumb mixture.
