Ingredients
All-purpose flour: 1 ¾ cups
Granulated sugar: 1 ½ cups
Baking soda: 1 teaspoon
Baking powder: 1 teaspoon
Salt: ½ teaspoon
Ground cinnamon: 1 teaspoon
Ground nutmeg: ½ teaspoon
Ground cloves: ¼ teaspoon
Pumpkin puree: 15 ounces (1 can)
Large eggs: 2
Vegetable oil: ½ cup
Flavoring agent (e.g., vanilla extract): 1 teaspoon
Instructions
Preheat your oven to 350°F (175°C). Prepare a 9×5 inch loaf pan by greasing and lightly dusting it with flour.
In a large bowl, whisk together the dry ingredients: flour, granulated sweetener, leavening agents (baking soda and baking powder), and spices (cinnamon, nutmeg, cloves). Ensure everything is well combined.
In a separate bowl, combine the wet ingredients: the squash mixture (pumpkin puree), large oval-shaped proteins (eggs), vegetable liquid (vegetable oil), and a flavoring agent (vanilla extract). Whisk until smooth.
Gradually add the wet mixture to the dry ingredients. Stir just until everything is incorporated. Be careful not to overmix the batter.
Pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the sweet bread cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
