Ingredients
4 large boneless chicken breasts, cut into 1.5 inch chunks
1 recipe fresh chimichurri sauce
1/3 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon ground coriander
Instructions
In a small bowl, whisk together the olive oil, lime juice, salt, pepper, garlic powder, cumin, and coriander.
Place the chicken pieces and marinade into a large ziploc bag, ensuring the chicken is evenly coated.
Seal the bag, removing excess air, and refrigerate for 15 minutes to allow the flavors to penetrate.
Preheat your grill to high heat.
Remove the chicken from the marinade and thread the pieces onto skewer sticks, discarding the leftover marinade.
Grill the skewers over high heat for approximately 15 minutes, turning occasionally, until the chicken is fully cooked and charred.
Remove from the grill and generously top with fresh chimichurri sauce before serving.
Notes
Ensure you are using fresh herbs for the chimichurri for the best flavor profile. If using wooden skewers, remember to soak them in water for 30 minutes prior to use to prevent burning.
