2/3 cup unsweetened apple sauce
1 cup egg whites
1 cup Greek yogurt
1 cup milk
2 Tbsp maple syrup
2 tsp vanilla extract
3 cups quick oats
1/2 cup hemp hearts
2.5 tsp cinnamon
1 tsp salt
2 tsp baking powder
1 tsp baking soda
3 cups apples, chopped
1/2 cup pecans, toasted
2 Tbsp brown sugar

Instructions

Preheat the oven to 375°F (175°C) and line a 9×13-inch baking dish with parchment paper.
Combine apple sauce, egg whites, Greek yogurt, milk, maple syrup, and vanilla in a large bowl.
Fold in the oats, hemp hearts, 2 teaspoons of cinnamon, salt, baking powder, baking soda, and 2 cups of the chopped apples.
Pour the mixture into the prepared baking dish.
Top with the remaining 1 cup of apples, toasted pecans, and a sprinkle of brown sugar and the remaining 0.5 teaspoon of cinnamon.
Bake for 50 minutes until golden and firm in the center.
Allow to cool slightly before slicing and serving.

Notes

Use gluten-free oats if you have dietary sensitivities. Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat individual portions in the microwave or oven.
